That's not to say on-demand is the right choice for every site. For seriously busy applications you still can't beat the speed of an auto that is always grinding ahead of itself. On-demand is as it says - you have to wait those few seconds for it to dispense. The bigger the grinder - and hence the blades - the less time it takes to dispense those 7 grams of sensory satisfaction.
For most small-to-medium sites on-demand can provide the theatre of freshly ground coffee and eliminate the necessity of recalibrating the doser every couple of months. Hit the switch and you know the portion dispensed will be consistent every shot. For most coffee aficionados, that accuracy is worth paying the extra money for. Add to that the facility for a digital reading of how many single shots v double shots pulled to check against your till reading and the argument really starts to stack in favour of on-demand on-the-button.
